Weight Loss Update!

I'm now down 147.5

I'm down three pounds in one week.

I'm only five pounds away from reaching my pre-pregnancy weight.

I'm not evening exercising. Just dieting.

Huge Milestone

25 lbs

I have lost 25lbs since having the baby!

My next goal is to lose 9 more pounds.

I'm using Keto diet and breastfeeding.

My body is burning the fat off my body for energy.

I'm still producing a ton of milk.

I'm only walking.

Working out made me too hungry and I gained three pounds. So, I had to go back to walking.

cinnamon rolls

cinnamon rolls (my bishop's wife at BYU-Hawaii)
Mix and let sit for 10 minutes.
3 1/2 cups warm water
3/4 cup sugar
6 tablespoons yeast
Add to the mixture in order given:
1 tablespoon salt
3 already beaten eggs
5 cups flour
1 cup oil
5 1/2 cups more flour

Mix and knead for 5 minutes. Divide in half, roll out one of the halves using flour into a rectangular shape. Spread on softened butter or margarine, being somewhat generous. Sprinkle on cinnamon as desired. Add 1 cup sugar (half brown sugar and half white sugar) over entire surface. Use 1/4 bag chocolate chips and spread out evenly. Nuts are optional. Roll up tightly, making one long roll and pinch dough together to close off top portion. Cut with sawing motion into 24 pieces, about 1 1/2" wide. Place on baking sheet. After 10-15 minutes, place into preheated oven to bake- 375 degrees for 7 to 15 minutes until lightly browned. Now prepare the other half.

Icing
8 ounces cream cheese, softened
1/2 cup butter or margarine
3 1/2 cups powdered sugar
1 tablespoon milk
3 drops vanilla flavoring

Blend ingredients until smooth.

Pani Popo Recipe

2 cans coconut milk
2 c water
1/2 box cornstarch
1 1/2 c sugar
4 c milk (not skim)
1 tsp vanilla
1 cinnamon roll or dinner roll recipe made into 24 rolls (or 24 refrigerator or freezer biscuits, dinner rolls or crescent rolls)

Directions:
Pour cornstarch into saucepan and add water slowly mixing constantly so it doesn't clump. Add coconut milk mixing continually. Add milk and sugar stirring continually. Put on stove on medium heat; bring to a boil. (If needs to be thicker, put some cornstarch in a bowl and pour a bit of stove top mixture into it, mix together then add back to saucepan.) Remove from heat.
Pour small amount of mixture on bottom of 2- 9x13" pans to coat. Line pans with bread. Stir remaining mixture and pour over the rolls. Bake as directed on bread recipe using. Serve hot. Super yummy!
